The muffins are so simple to make. Merely whisk the eggs then add the feta, spinach and some black pepper. I really don’t use any salt as feta is typically very salty by itself.

The muffins will retain in the fridge for up to 2 times and they are great to then have as a grab-and-go breakfast or lunch. Or they can be reheated if you prefer to try to eat them warm.

- 100g feta
- 50g clean spinach
- 5 medium eggs
- black pepper
- spray oil
